Recently I decided from now on I´ll just eat vegan and so I try many delicious recipes lately.
I´m pleasantly surprised that vegan way of live not means to live very limited, cause it gaves so much very yummie recipes.
The only thing I´m really missing is cheese, but in the meantime it gave many replacements for it.
I´ve posted a picture of this vegan zucchini carrots burger on facebook a few days ago and considering the demand now I´m writing this recipe for you.
Ingridients for 4 portions
- 2 medium Zucchini
- 2 medium carrots
- fresh minced herbs
- 1 onion
- 1 garlic glove
- vegetable stock
- 4 tbsp of oat flakes
- 2 tbsp of yeast flakes
- 2-3 heaped tbsp of meal
- 3 heaped tbsp of breadcrumbs
- maybe a little bit soya milk, if the vegetables not give enough liquid
- oil to roast
First peel the carrots and rasp those and also the Zuchini in a bowl. After that mince the onion, the garlic cove and the herbs in little pieces and give it to the vegetables in the bowl.
As well add the yeast flakes and the oat flakes to the vegetables and kneat it all. Now flavour the mass with salt, pepper and Vegetable stock. The Burger mass should be moist enough, cause it will be swell on the basics of meal and flakes. If the vegetables not give enough liquid add a little bit of soa milk.
Afterwards the mass might swell for 20 minutes.
Now knead it once more and as needed add breadcrumps and Soya milk.
The burger mass should be harder now. Best, you taste it now and if applicable flavour it again.
Now you can form the mass and roast those in a non-stick frying pan. Don´t forget to turn occasionally.
