Hello my dear, Christmas is over and we can imagine, we have enough of all the sweets and feast! But no! Today in the morning I got the desire of a tort tarte with fruits and vanilla. Luckily we had peaches at home and so I decided to bake a vanilla peach tart.
It´s a very easy vegan recipe and I hope you like it, too!
- For the dough:
- 250 g spelt flour
- 100 g cocoa
- 130 g vegan butter
- 1 teaspoon baking powder
- 75 g sugar
- 6 tablespoon oat drink
for the coating:
- 2 vanilla pod
- 500 ml soyadrink
- 1,5 tablespoon soya fleur
- 4 tablespoon starch
- 100 g cane sugar
Preparation of the vanilla peach tart:
First mix together all ingredients of the dough in a bowl and knead it til it has firm consistency. Now greace the tart dish and put the dough in. Try to get a little edge. After that put the dough in the oven for 10 minutes by 200° C top/bottom heat.
In the meantime you can fix the vanilla pudding. For that, give 350 ml soyadrink in a pot. Cut the vanilla pods lengthwise, scrape out the core and give it together with the vanilla pods in the pot too. Now let it boil up briefly.
Meanwhile mix 150 ml soyadrink with soya fleur, starch and sugar.
After boiling up, remove the vanilla pods from the pot and add the starch mixture to the hot soyadrink. Boil it up again for 1 or 2 minutes.
Now take the dough out of the oven and give the hot vanilla pudding and the peaches on it. Bake for another 20 minutes and than it´s ready!
If you like, you could decorate the tart with cocolate or icing sugar …
