Pancakes, Crepes, Blinis or however you wanna call them you surely remember from childhood. When time was of the essence at my home they were prepared, usually with applesauce and sugar.
Nowadays I still love pancakes but without eggs and milk and some more variations than just sweet. So here´s my favourite one: Pancakes with mushroom rocket filling and herbal cream.
Ingredients dough:

flour
-
2 tablespoons mineral water
-
oat drink
-
neutral vegetable oil
-
curcuma for dyeing
-
salt
Ingredients Filling:
-
mushrooms
-
cocktail tomatoes
-
rocket
-
red onion
-
vegetable oil
-
balsamic vinegar
-
garlic
-
salt & pepper
Ingredients herbal cream:
-
400 ml vegetable stock
-
400 ml soy cream
-
some dough
-
fresh herbs
Preparation:
For the dough mix flour and salt into a big bowl. Little by little add the oat drink and constantly stir in order to prevent lumps from forming. Also add the mineral water and curcuma in the same way. Heat the pan and fry the cake for 2 minutes each side.
For the filling cut tomatoes and mushrooms into pieces. Heat the oil in a large skillet and add the onions. Press the garlic,or cut it very fine and also add it to the skillet. Add the mushrooms all at once and cook, stirring, over medium-high heat until they begin to brown for about 3-4 minutes. After that add the tomatoes and rocket and season with oil, balsamic, salt and pepper. Keep it warm.
For the herbal cream take a medium pot, mix the soy cream and vegetable stock and heat slowly. Mix some flour with cold water and add it to the pot while stirring.
Finally take the pancakes, spread the filling on it, turn it on one side and sprinkle with the cream. And now enjoy your savory pancakes meal!
