Marzipan is one of the sweetest things I can not and don´t want without. This oriental treat is a typical Christmas- or Winter-sweet for many people, but I can eat it the whole year even in the summer at 35 degrees in the shade.

Vegans or people who don´t want to eat honey, have to note the ingredients, cause some producers use honey as a sweetener.

However, in any case yesterday was a day I had appetite for cake with marzipan, but also I had no desire to invest any time. In such cases muffins are always a good idea.

And while my son Eric and I we´re standing in front of the mixing bowl, we had the idea that it could be tasty to add cocoa and make crumbles with a cinnamon flavor.

Ingredients for the dough:

  • 250 g spelt flour
  • 1 pck of baking powder
  • 150 g sugar
  • ca. 70 g cocoa
  • 200 g Marzipan
  • 200 ml soya cuisine
  • 2 tablespoon Oil
  • 100 g margarine
  • water

Ingredients for the crumbles:

  • ca. 100 g of vegan butter
  • ca. 130 g flour
  • cinnamon and sugar
  • a pinch of salt

Preparation of the marzipan muffins:

Stir together the flour, sugar, cocoa, baking powder and margarine in a mixing bowl. Now cut the marzipan in small pieces and give it to the bowl, too. Now stir in soya cuisine, oil and water and mix quickly and lightly til you get a creamy consistency.

Fill the dough in the muffin cases.

For the crumbles heat the butter gently til it´s fluent but not to hot. After that mix together all the crumble ingredients with a dough hook in a bowl til you get crumbles and put them on the top of the muffins.

Now bake the small cakes for 25 minutes and 180 C.
