For me, Coconut macaroons are not just typical Christmas Cookies like perhaps almond biscuit. I think you can eat this delicious sweet cookies throughout the whole year or what do you think?
Ok, I admit, for me no cookie is just a typical Cristmas Cookie. At least not insofar as you can not eat them to another season. As I was a child, I always asked myself, why can I not find some of my favourite Cookies in the summertime.
Anyway, today I´ll show you an easy peasy recipe for vegan Coconut macaroons. I think sometimes it´s good to have recipes at one´s fingertips which are uncomplicated and quickly to prepare.
Fixings for 1 ½ baking sheets.
200 g dessicated coconut
150 g cane sugar
2 tbsp. Coconut oil
1 tbsp. Sunflower oil
4 tbsp. Soy flour
a pinch of salt
100 g dark chocolate coating
perhaps something else to decorate
Preparation of the Coconut macaroons:
First you can mix, the dessicated coconuts, sugar, oil, flour and salt in a mixing bowl. Then add water to it till you win a semifluid texture.
Preheat the oven to 180 degrees!
Now put each teaspoon of the duff on each one oblate and bring it in form till it looks like a little mountain. Now bake it until they´re golden brown about 20 minutes.
After it melt the chocolate and give it on the coconut macaroons. If you like, you can decorate them with minced almonds or anything else.
